1、粉質玉米(Flour corn):顆粒較軟,呈馬齒形,淀粉含量較膠質玉米高,粉質胚乳細胞大,淀粉粒多為圓形,直鏈淀粉比重高,蛋白質含量較低,與淀粉粒結合不緊密,結構疏松,呈不透明狀;
一般東北烘干玉米大部分是粉質玉米,較易粉碎,切開或咬開斷面呈白粉狀,對畜類利用率效果明顯,乳豬料宜選擇粉質玉米,易糊化,適口性較好。
2、膠質玉米(Flint corn):顆粒較硬光澤好,半馬齒狀,容重在每升690g/L以上,淀粉含量相對較低點,且支鏈淀粉比重高,其角質胚乳細胞小,淀粉粒小而呈多角形,淀粉粒間充滿蛋白質,因而組織致密,呈半透明狀;粗蛋白質含量比粉質玉米高,但多為角蛋白,畜類較難利用;
膠質玉米粒大飽滿,較難粉碎,破碎后呈碎粒狀,且粒度較均勻,口感差,但核黃素含量較高,適合做禽料,特別是蛋雞料。
河北,河南,山東等地產的大部分是膠質玉米,產量相對比粉質玉米要高。
